Besan Panki

Panki is a traditional Gujarati dish. Its name comes from the Gujarati word ‘paan’, meaning ‘leaf,’ referring to the banana leaves in which the thin pancake is steamed.

Ingredients:

  • 1cup besan
  • 1/2 cup curd
  • 1 tsp chopped green chillies
  • 1/2 cup chopped coriander leaves
  • Water as required
  • Salt to taste
  • 2 tsp ghee
  • Banana leaves

Method:

  • Mix all the ingredients listed above except the banana leaves and form a batter.
  • Cut the banana leaves into squares. Grease the banana leaves with oil/ghee.
  • Spread the batter over one leaf and cover it with another leaf.
  • Heat a griddle or tawa and cook for 3 to 4 minutes. Flip and cook the other side as well.
  • Serve hot panki with coriander chutney.



Foxtail Millet Beetroot Risotto

A wholesome twist on the classic risotto, made healthier with foxtail millet and the earthy sweetness of beetroot.

Ingredients:

  • 1 cup foxtail millet

  • 3/4 cup beetroot puree

  • 2 tbsp butter

  • 1 tsp garlic (minced)

  • 1 tbsp sour cream

  • Salt to taste

  • 1/4 cup cheese (grated)

  • 1 tsp olive oil

Method:

  • Soak foxtail millets for 3 to 4 hours till they become soft.
  • Heat oil in a pan and sauté garlic. Add soaked foxtail millets and cook for a few minutes.
  • Add beetroot purée and mix properly.
  • Then add butter and salt to taste.
  • Simmer and cook well until the risotto attains consistency.
  • Stir continuously and add the sour cream.
  • Finally, add the cheese and enjoy warm millet risotto!
