Besan Panki
Panki is a traditional Gujarati dish. Its name comes from the Gujarati word ‘paan’, meaning ‘leaf,’ referring to the banana leaves in which the thin pancake is steamed.
Ingredients:
- 1cup besan
- 1/2 cup curd
- 1 tsp chopped green chillies
- 1/2 cup chopped coriander leaves
- Water as required
- Salt to taste
- 2 tsp ghee
- Banana leaves
Method:
- Mix all the ingredients listed above except the banana leaves and form a batter.
- Cut the banana leaves into squares. Grease the banana leaves with oil/ghee.
- Spread the batter over one leaf and cover it with another leaf.
- Heat a griddle or tawa and cook for 3 to 4 minutes. Flip and cook the other side as well.
- Serve hot panki with coriander chutney.

Foxtail Millet Beetroot Risotto
A wholesome twist on the classic risotto, made healthier with foxtail millet and the earthy sweetness of beetroot.
Ingredients:
1 cup foxtail millet
3/4 cup beetroot puree
2 tbsp butter
1 tsp garlic (minced)
1 tbsp sour cream
Salt to taste
1/4 cup cheese (grated)
1 tsp olive oil
Method:
- Soak foxtail millets for 3 to 4 hours till they become soft.
- Heat oil in a pan and sauté garlic. Add soaked foxtail millets and cook for a few minutes.
- Add beetroot purée and mix properly.
- Then add butter and salt to taste.
- Simmer and cook well until the risotto attains consistency.
- Stir continuously and add the sour cream.
- Finally, add the cheese and enjoy warm millet risotto!
