Tricolor Paranthas: Ingredients- 1- Carrots 3 nos 2- Palak/ spinach-1 bunch 3- Wheat flour 200gms 4- Pinch of salt 5- chilly powder 6- Ginger garlic paste Procedure- 1 -Grind palak and carrot separately 2- Make 3 portins of wheat flour and add palak paste to one portion, and carrot paste to another portion 3- Let the third portion remain white. 4- Add chilly powder and salt. 5- Make long strips of all the 3 doughs and place them one above the other. 6- Roll it together with rolling pin 7- Roast them on a tawa 8- Serve with green chutney, ketchup or mayo

Healthy Crunchy Sprouts Salad:

Ingredients:
Green Gram Moong - sprouted
Tomatoes -finely chopped
Onion -finely chopped
Pudhina leaves
Sweet corn kernels
Carrot - finely chopped
Chaat masala - 1 tsp
Black Pepper powder - 1 tsp
Salt - as required
Lemon juice - 1 tsp

Method:
Mix all the above ingredients in a mixing bowl and serve. This is filled with protein and all essential vitamins. A wonderful salad that is both healthy and yummy!

Hi Pallavi. My son was a very fussy eater. Now he is 5 and I have tried experimenting with his lunch box menu. It seems to have worked.
You can make colurful sandwiches like the Tiranga Sandwich with Carrot, Cheese, Coriander and mind Paste.
You can make Vegetable Rolls with Chappattis and fresh vegetables and a stuffing of boiled potatoes.
Making wholewheat pooris with Chana or Rajma is also very appetizing.
Smiley stuffed parathas (eg. cabbage, radish, potato, daal) with eyes, nose and mouth made up of cucumber. carrot and Tomato.

I plan my menu for the week the previous weekend and this really helps me be more quick while cooking. Some of the healthy lunch box menus that I follow are:

1. Egg Sandwich - is filling and has sufficient protein and I usually include a lot of veggies inside.
2. Millets poha - I replace flat rice with different millet grains and make poha from it. This is something my kid started liking after 2 - 3 times.
3. Fruit and nuts smoothie - This is an accompaniment I give along with lunch. This is very filling and nutritious. I usually blend together a minimum of 3 fruits, a handful of different nuts and milk. I add little honey to it.
4. Veg noodles - This is easy and can be done even with our commonly available instant noodles. I load it with plenty of veggies and even one packet of noodles can serve two people easily.

Hi, noodles and parathas have already been mentioned. Here are more ideas that might help you :
*Dhoklas, rava idli, Ragi idli, oats idli and other types of idlis
* Chinese fried rice with chopped veggies like cabbage, carrots, peas, (also can add eggs, roasted mushrooms, paneer) etc.,
* aloo tikki, veg cutlet
* Pasta with veggies and sauce of your choice
* kulipanyaram/paddu
*poha- modify the basic recipe by adding nuts, cooked sprouts etc.,
*surprise him with Pooran poli/obbattu (if the filling and dough are ready, then it can be done in the mornings easily) along with the main dish
*akki rotti/rice roti -Plain or with onions, coriander leaves, grated coconut etc.,

Millets, oats or even low sugar fruits are great options. A porridge made of Ragi is not only filling but also very nutritious. A bowl of lightly sauted vegetables, sprinkled with salt and paper and served with a half or full-boiled egg is another appetising idea. Gram flour (Besan) Chilla with coriander leaves, capsicum, onions, tomato and green chilli can also be taken.

I would like to know more about salad recipes which are quick to make and tasty as well.I make an interesting salad during summer with raw mango which is s delicious one. Below I am sharing the recipe ...It goes well with any variety rice or as an accompaniment.
Ingredients:
Carrot grated
Coconut grated
Coriander leaves diced
Raw mango grated
Ginger( little) grated
Salt
Sugar (little/optional)
Pepper powder
Method: Simply mix all grated items above and give it a nice toss. Its a tasty salad.

Anusha here I had prepared beetroot dosa with veg salad and the recipe is Ingredients for beetroot dosa batter idli dosa batter-2cups beetroot-1small sized chopped roughly green chillies-2 red chillies -2 ginger - 1 inch sized chopped cumin seeds or jeera - 1 teaspoon oil for cooking dosas In a mixer grinder , add the roughly chopped beetroot, green chillies, red chillies, ginger and cumin seeds and grind to a smooth batter. In a bowl take the idli dosa batter add the ground beetroot paste and mix well so beetroot dosa batter will be ready. Ingredients for veg salad 1/4 cup carrot small chopped 1/4cup beans small chopped 1/4 cup sprouted green gram seeds 1/4 cup chopped onion 1tsp lime juice 1/4 tsp black pepper 1/4 tsp salt 1/4 tsp chat masala powder add all these and mix well so the veg salad will be ready to serve.

Spring dosa recipe : Ingredients : for schezwan noodles: 2 tsp oil 2 cloves garlic finely chopped 3 stem spring onions finely chopped 1 small capsicum thinly sliced 1 carrot thinly shredded 1 small thinly shredded cup cabbage thinly shredded 1 tbsp schezwan sauce 1 tsp soy sauce salt to taste 1 tsp vinegar 1 rice noodles / any noodles cooked Dosa batter : Ingredients : 3 cups rice sona masuri / dosa rice 1 cup urad dal tsp methi / fenugreek seeds 1 cup thin poha / avalakki / beaten rice salt to taste water for soaking Instructions: firstly, in a large bowl, soak 3 cups of rice and methi seeds for atleast 5 hours. furthermore, soak urad dal for 3 hours. drain the water from urad dal and keep aside. transfer the soaked urad dal into blender and blend to smooth and fluffy batter. collect it into a large bowl and keep aside. further, blend the soaked rice along with poha adding water if required. transfer to the bowl of urad dal batter. mix well making sure the batter has combined completely. also clean the sides with your hand. cover and ferment in a warm place for 8- 12 hours. the next day you can see the batter has raised well indicating its well fermented. additionally, mix the batter slightly. further scoop the required batter in a different bowl. and add salt to the batter and mix well. Schezwan Sauce: Ingredients : 2 cups dried red chilli cup oil cup garlic finely chopped 2 tbsp ginger finely chopped cup water tsp pepper crushed 2 tbsp vinegar 2 tbsp soy sauce 1 tbsp sugar 2 tbsp tomato sauce salt to taste Instructions firstly, soak dried red chilli in hot water for 30 minutes or till they turn soft. discard the water and blend to smooth paste adding water if required. keep aside. now in a large kadai, heat cup oil. saute in cup garlic and 2 tbsp ginger for a minute for 2. furthermore, add in prepared red chilli paste. saute for 2 minutes, so that chilli gets cooked well. now add cup water and adjust consistency. cover and simmer for 15 minutes. make sure to cook the sauce till oil floats on top. furthermore add in tsp pepper, 2 tbsp vinegar, 2 tbsp soy sauce, 2 tbsp tomato sauce, 1 tbsp sugar and salt to taste. mix well making sure everything is combined well. finally, serve schezwan sauce is ready. For dosa: 4 cup dosa batter 3 tbsp butter 3 tsp schezwan sauce Instructions: schezwan noodles recipe: firstly, in a large kadai or wok heat oil. further add garlic and saute well. also add spring onions and continue to sauce. now add vegetables and saute for a minute or till they shrink slightly. additionally add salt, schezwan sauce, soy sauce and vinegar. also add cooked rice noodles or any noodles of your choice. mix gently without breaking the rice noodles and making sure the sauce has covered uniformly. keep aside. How to prepare spring dosa: pour a ladleful of the dosa batter on it and spread it in a circular motion thin circle. add a dollop of butter add schezwan sauce and butter together and spread. also spread 2 tbsp of prepared noodles at one side. cook till the bottom of dosa turns golden brown. then roll the dosa along with noodles. finally, cut half spring dosa and serve immediately with tomato sauce.

Spring dosa recipe :

Ingredients :

1 cup thin poha / avalakki / beaten rice
salt to taste

Instructions:

firstly, in a large bowl, soak 3 cups of rice and methi seeds for atleast 5 hours.
furthermore, soak urad dal for 3 hours.
drain the water from urad dal and keep aside.
transfer the soaked urad dal into blender and blend to smooth and fluffy batter.
collect it into a large bowl and keep aside.
further, blend the soaked rice along with poha adding water if required.
transfer to the bowl of urad dal batter.
mix well making sure the batter has combined completely.
also clean the sides with your hand.
cover and ferment in a warm place for 8- 12 hours.
the next day you can see the batter has raised well indicating its well fermented.
additionally, mix the batter slightly.
further scoop the required batter in a different bowl.
and add salt to the batter and mix well.

Grind the millet, Urad dhal and Poha together till smooth batter is formed by adding little water. 4. Ferment it for 6-8hrs. 5. Make dosa /utapam as usual and add veggies of your choice. Yummy yummy millet dosa /uthapam ready.
