Especially when it comes to making some simple breakfast dishes such as pancakes for your kids, they will not only enjoy eating them but also have fun in assisting you while you make them. 1. Whole wheat and apple pancake

Makes 8–10 pancakes

Ingredients:

  • 1½ cups whole wheat flour
  • ½ cup refined flour
  • 1 apple, grated
  • 1½ cups curd/buttermilk
  • ¼ cup puréed apple
  • 2 tbsp honey
  • 1 tsp cinnamon powder
  • 2 tbsp butter for frying

Method:

  1. For this recipe, use crunchy and slightly tart varieties of apples, such as golden or Granny Smith. If you cannot find one, any other apple will do.
  2. In a large bowl, take the flour and the cinnamon powder, and give a quick whisk.
  3. Now, add the buttermilk, puréed apple and honey to the dry ingredients in the bowl. Mix well to ensure there are no lumps.
  4. Fold in the grated apple till everything is well-combined. The batter should be thick and not runny.
  5. Heat a griddle or pan on medium flame and grease the surface with butter. Using a ladle or ¼ measuring cup, pour the batter on the griddle. Fry for a couple of minutes.
  6. Flip and fry the other side till golden brown. Serve hot with dollops of butter.

2. Banana and Ragi pancakes

Makes 6 pancakes

Ingredients:

  • 1 cup ragi (finger millet) flour
  • 1 ripe banana
  • 1 tbsp powdered jaggery
  • 1¼ cups milk
  • ¼ tsp nutmeg powder
  • ½ tsp salt
  • Handful of walnuts (optional)

Method:

  1. In a bowl, mash the banana with a fork or potato masher till smooth.
  2. Add the ragi and the jaggery powder. Mix well.
  3. Add the milk and using a whisk, combine all the ingredients till you get a smooth batter.
  4. Add the nutmeg and salt, and mix well.
  5. The batter should be thick and not runny. Ensure that the batter is of pouring consistency. If it is too thick, add a few tablespoons of milk.
  6. Heat a griddle or pan on medium flame and grease the surface with ghee. Using a ladle or ¼ measuring cup, pour the batter on the griddle. Fry for a couple of minutes.
  7. Turn the pancake and fry the other side for a few minutes till fully cooked.
  8. Put the pancakes on a plate and sprinkle some crushed walnuts on top before serving.

3. Oat and chocolate pancakes

Makes 10–12 pancakes

Ingredients:

  • 1½ cups oat flakes
  • ½ cup refined flour
  • ¼ cup unsweetened, organic cocoa powder
  • 4 tbsp brown sugar
  • 2 eggs
  • 1¾ cups milk
  • 3 tbsp melted butter
  • ½ tsp vanilla extract
  • 1 tbsp butter (for frying)

Method:

  1. In a large bowl, mix all the ingredients, except for one tablespoon of butter. Combine well.
  2. The batter must be thick and not runny.
  3. Heat a griddle on medium flame and grease the surface with a little butter. Using a ladle or ¼ measuring cup, pour the batter on the griddle. Fry for a couple of minutes.
  4. Turn the pancake and fry the other side for a few minutes till nice and fluffy.
  5. In the same way, make pancakes till all the batter is used up.
  6. Serve hot.

4. Buttery lemon pancakes

Ingredients:

  • 1½ cups refined flour
  • 1 cup buttermilk
  • ¼ cup butter
  • Zest and juice of one lemon
  • 2 tbsp sugar
  • 1 tsp baking powder
  • Few teaspoons butter (for frying)

Method:

  1. In a large bowl, whisk all the ingredients together to get a smooth pancake batter.
  2. Heat a frying pan or tawa on medium heat and brush with some butter.
  3. Pour the batter into the pan and fry. You will see tiny bubbles form on the surface.
  4. Flip and fry the other side until golden brown.
  5. Serve with a drizzle of honey.

5. Mashed potato and onion pancakes

Makes 6 pancakes

Ingredients:

  • ½ cup maida (refined flour)
  • 2 large potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 1 egg
  • 2 tbsp butter
  • 2 tbsp milk
  • A handful of coriander leaves for serving (optional)
  • Salt and pepper to taste
  • 1 tbsp oil/butter (for frying)

Method:

  1. In a large bowl, mix the flour, salt and pepper. Stir in the chopped onions.
  2. To this mixture, add the egg, butter, milk and mashed potatoes.
  3. Mix with a spoon until well-combined.
  4. his must be a doughy mixture, and not of pouring consistency like regular pancake batter.
  5. Shape the mixture into six discs with your hands.
  6. Heat a frying pan on medium heat and brush some oil or butter on it.
  7. Place the discs, one or two at a time on the hot pan and fry till golden brown.
  8. Turn slowly and do the same on the other side.
  9. Serve with a sprinkle of coriander leaves.

Note: You can spice up the potato pancakes by adding different condiments to the mixture and serve with some grated cheese, spring onions or tomato ketchup. You can also replace the refined flour with powdered oats for a healthier recipe.

6. Mini cheese pancakes

Makes 12–15 mini pancakes

Ingredients:

  • 1½ cups refined flour (maida)
  • ½ cup grated cheese (cheddar/mozzarella/any cheese of your choice)
  • 1¼ cups milk
  • 2 eggs
  • 2–3 tbsp melted butter
  • ½ tsp dried herbs (oregano/thyme/rosemary)
  • ½ tsp pepper powder
  • 1 tsp baking powder
  • Salt to taste
  • Chilli flakes (optional)
  • Extra butter for frying

Method:

  1. In a large bowl, sift together the flour, baking powder and salt.
  2. Add the pepper, chilli flakes and dried herbs.
  3. Add the grated cheese and give all the ingredients a stir to mix.
  4. In another bowl, whisk the eggs, milk and butter till well-combined.
  5. Now add the flour mixture to the wet one and fold in slowly until everything is mixed and there are no lumps.
  6. Heat a griddle on medium flame and grease it with some butter. Using a spoon or small ladle, pour the batter on the griddle to make mini pancakes. Fry for a couple of minutes.
  7. Turn the pancake and fry the other side for a few minutes till golden brown.

Note: You can be versatile and use different varieties of cheese or fresh herbs in the recipe, based on your child’s preference. If you want to make it healthier, replace maida with whole wheat flour.

7. Strawberry and almond pancakes

Makes 8-10 pancakes

Ingredients:

  • 1¾ cups whole wheat flour
  • ½ cup ground almonds
  • 1 tbsp brown sugar
  • 1 egg
  • 1 tsp baking powder
  • 1 cup curd
  • ¼ cup puréed strawberries
  • ½ cup fresh strawberries (for topping)
  • 2–3 tbsp cream for serving (optional)
  • Butter for frying

Method:

  1. In a large bowl, whisk together the whole wheat flour, ground almonds, sugar and baking powder.
  2. Add the egg, curd and pureed strawberries to the dry mixture and combine well.
  3. Heat a griddle on medium flame and grease the surface with a little butter. Using a ladle or ¼ measuring cup, pour the batter on the griddle. Fry for a couple of minutes.
  4. Turn the pancake and fry the other side for a few minutes till nice and fluffy.
  5. Take the pancake on a plate and top it with a few strawberry pieces.
  6. Serve with a dollop of fresh cream.

8. Pumpkin and bajra pancakes

Makes 10 pancakes

Ingredients:

  • 1½ cups bajra (pearl millet) flour
  • 1 cup milk
  • ½ cup pumpkin, boiled and pureed
  • 2 eggs
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • ½ tsp nutmeg powder
  • 1 tsp baking powder
  • Salt to taste
  • Extra butter for frying

Method:

  1. In a large bowl, take the flour, nutmeg and baking powder. Stir to mix well.
  2. In another bowl, whisk the butter and sugar. Add the milk, eggs and pumpkin purée, and mix until well-combined.
  3. Now, slowly add the dry ingredients to the milk mixture and combine until you get a smooth batter.
  4. Heat a griddle or frying pan on medium flame and grease the surface with a little butter. Using a ladle or ¼ measuring cup, pour the batter on the griddle. Fry for a couple of minutes.
  5. Turn the pancake and fry the other side for a few minutes till nice and fluffy.
  6. Serve hot with butter or honey.
