Perfect holiday treats

Holiday Funfetti Cupcakes

Ingredients:

For the cupcakes:

  • 1 ½ cups white flour (maida)
  • ½ cup butter
  • 1 cup sugar
  • 2 whole eggs
  • 1 tbsp vanilla extract
  • 1 ¼ tsp baking powder
  • 1/3 cup hung yoghurt
  • ¼ cup milk
  • 1/3 cup red and green sprinkles

For the frosting:

  • 1 cup heavy cream
  • 3 cups chocolate chips
  • 2 tbsp powdered sugar

Method:

For the cupcakes:

  • Preheat the oven to 350o F. Line the cupcake tin with cupcake liners.
  • Mix the dry ingredients in a bowl. Keep aside.
  • Cream the butter and sugar in a bowl until fluffy, using an electric mixer, for about 2-3 minutes.
  • Add the vanilla extract, eggs and yogurt, and beat until combined.
  • Add the dry ingredients and milk alternately, and mix well.
  • Once the batter is smooth, fold in the sprinkles.
  • Pour the batter into the cupcake tins till two-thirds full and bake for 15-18 minutes.
  • Once cool, frost and decorate with sprinkles.

For the frosting:

  • Place chocolate chips in a bowl.
  • In a heavy pot, heat the cream.
  • Once it comes to a boil, pour over chocolate chips and mix.
  • Add the powdered sugar and beat well.
  • Let it sit until it cools completely.
