DAY 4 | COOK SMART | TRADITIONAL RECIPE 2

JOWAR RAVA IDLI
Jowar idli is a healthy alternative to rice idli. It is packed with protein, fibre, B vitamins, calcium, zinc, copper and magnesium.
INGREDIENTS
Jowar rava - 2 cups
Urad dal - 1 cup
Fenugreek seeds - 1 tsp
Coconut (grated) - ½ cup
Salt for taste
Sugar - 1 tsp
Sweet corn - ½ cup
Carrot - ½ cup
Cumin seeds - 1 tsp
Curry leaves (for decoration)
METHOD
1. Soak 1 cup of urad dal for 4 hours.
2. Grind the soaked urad dal and mix with 2 cups of washed jowar rava and set aside for 8 hours to
ferment. After the fermentation, add 1 tsp salt to the batter.
4. Pour the batter into idli plates and decorate it with carrots, and sweet corn.
5. Boil water in an idli stand and keep the idli plates to steam for 15 to 20 minutes.
6. Once cooked, serve hot idli with carrot or mint chutney.
Note: Jowar rava idli batter takes less time to ferment compared to normal idli batter.

COLOCASIA LEAVES AND SPROUTED GREEN GRAM CURRY
Colocasia leaves and sprouted green gram curry also called as
Tetla Padengi Ghassi (in Tulu) is a traditional Mangalorean dish cooked in coconut-based spice curry.
INGREDIENTS
Colocasia leaf knots - 2 Cups
Sprouted green gram - 1 cup
Grated coconut -1/2 cup
Byadgi chili - 5-6
Tamarind - lemon size
Cumin seeds - 1 Tsp
Coriander seeds - 2tsp
Turmeric - 1/2 pinch
Oil - 2 tbsp
Salt to taste
METHOD
Boil moong dal and keep it aside. Make tetla by rolling colocasia leaves and knotting them. Boil the knotted colocasia leaves along with sprouted green gram with water.
To a mixer, add grated coconut, chillies, tamarind, cumin, coriander, and turmeric and grind to make a smooth paste.
To a pan, add oil and roast the coconut mixture. Add water to bring it to a boil.
Now add boiled moong dal and colocasia leaves. If the curry is thick, add water to get a thinner consistency. Reduce the flame and let it cook for a few minutes. Add salt as per taste.
Temper the curry with oil, mustard seeds and curry leaves.
Enjoy Tetla Padengi Ghassi with hot steamed rice.

LENTIL CAKE CURRY
Lentil cake curry is a traditional satvik dish cooked without onion or garlic. This curry is best enjoyed with a hot plate of steamed rice!
INGREDIENTS
Chana dal - 1 cup
Potato - 1 large
Bay leaf - 2
Cumin seeds - ½ tsp
Ginger paste - 2 tsp
Sugar - ½ tsp
Ghee - 2 tsp
Cumin powder - 2tsp
Red chilli powder - 2 tsp
Crushed peanuts - 2 tbsp
Turmeric powder - ½ tsp
Garam masala - 1 tsp
Salt to taste
Mustard oil - as required
Water - as required
METHOD
First, soak chana dal overnight for at least 3 to 4 hours.
Make a smooth and thick paste of chana dal by blending it in a blender.
Take a deep pan and heat the mustard oil. Fry the paste on low flame.
Add 1 tsp each of ginger paste, cumin and red chilli powder. Add salt and crushed peanuts.
Now take a big plate and grease it with oil. While the lentil paste is hot, pour it on the greased plate and flatten it.
Cut the lentil paste into square or diamond shapes with the help of a knife.
Heat mustard oil in a pan and shallow fry the lentil cakes. Keep aside.
Then fry the potato cubes and keep them aside.
In the same pan, heat mustard oil and crackle cumin seeds and bay leaf. Add remaining ginger paste and red chilli powder with half a cup of water.
Saute and add fried potato cubes. Let the potatoes become tender then add the fried lentil cakes.
Cook it for a few minutes. Add garam masala and ghee.
Lentil cake curry is ready. Serve it with steamed rice.

Non-stick cookware contains a coating which starts to break down at high temperatures and releases toxic chemicals into the food. These chemicals can cause flu-like symptoms, and even affect the lungs and kidneys.
Aluminium cookware can also be harmful as aluminium reacts with acidic foods like tomatoes, lemon and vinegar. Also, aluminium absorbed through the food can cause ulcers, inflammation of the gut, certain skin conditions, osteoporosis, etc. So, it is best to stop using non-stick and aluminium cookware!

On packaged food products, the ingredients are listed in descending order by weight. The first three ingredients listed indicate that they are present in large quantities in the product.
