DAY 5 | COOK SMART | DID YOU KNOW?

Food wrapped and cooked in leaves enables slow steaming. This process allows the colour and flavour from the leaves to seep into the food. Food wrapped in leaves can also be fried or boiled.

Here are some of the leaves that are ideal to cook food in:

  • Banana leaves
  • Turmeric leaves
  • Jackfruit leaves
  • Pumpkin leaves
  • Colocasia leaves
  • Cinnamon leaves
  • Teakwood leaves

Are you aware of any other leaves that are traditionally used to cook food? Do let us know.

COLOCASIA LEAVES AND SPROUTED GREEN GRAM CURRY

Colocasia leaves and sprouted green gram curry also called as

Tetla Padengi Ghassi (in Tulu) is a traditional Mangalorean dish cooked in coconut-based spice curry.

INGREDIENTS

Colocasia leaf knots - 2 Cups

Sprouted green gram - 1 cup

Grated coconut -1/2 cup

Byadgi chili - 5-6

Tamarind - lemon size

Cumin seeds - 1 Tsp

Coriander seeds - 2tsp

Turmeric - 1/2 pinch

Oil - 2 tbsp

Salt to taste

METHOD

  1. Boil moong dal and keep it aside. Make tetla by rolling colocasia leaves and knotting them. Boil the knotted colocasia leaves along with sprouted green gram with water.

  2. To a mixer, add grated coconut, chillies, tamarind, cumin, coriander, and turmeric and grind to make a smooth paste.

  3. To a pan, add oil and roast the coconut mixture. Add water to bring it to a boil.

Some keywords to help you identify hidden sugars:

  • Syrup (e.g., corn syrup)
  • Words ending in 'ose' (e.g., fructose, sucrose, maltose, dextrose)
  • Added sugar (e.g., fruit nectars, concentrates of juices, honey, agave and molasses)

DAY 4 | COOK SMART | TIP OF THE DAY

  • Well-seasoned cast iron cookware creates a natural non-stick coating which requires less oil for cooking. Cast iron cookware not only enhances food flavours but also imparts iron content to the food.
  • Earthen or clay pots are porous in nature and allow the heat to circulate evenly during cooking. They also impart flavour, retain nutrients, and release minerals like calcium, magnesium, iron and phosphorus into the food.
  • Stainless steel cookware do not react when exposed to acidic foods. Therefore, the natural taste and flavours of the food are retained. Also, stainless steel cookware are long-lasting and durable.

DAY 3 | COOK SMART | DID YOU KNOW?

Non-stick cookware contains a coating which starts to break down at high temperatures and releases toxic chemicals into the food. These chemicals can cause flu-like symptoms, and even affect the lungs and kidneys.

Aluminium cookware can also be harmful as aluminium reacts with acidic foods like tomatoes, lemon and vinegar. Also, aluminium absorbed through the food can cause ulcers, inflammation of the gut, certain skin conditions, osteoporosis, etc. So, it is best to stop using non-stick and aluminium cookware!

Preeti Agrawal Sep 3, 2022

DAY 2 | BUY SMART | TIP 4

On packaged food products, the ingredients are listed in descending order by weight. The first three ingredients listed indicate that they are present in large quantities in the product. It is best to avoid food products that list sugar, salt, oil, or all-purpose flour as the first three ingredients. So, choose wisely!

Cross-contamination can occur when microbes spread from one food product to another. This can easily cause food poisoning. So, always separate meat, eggs, milk, and other foods in the grocery shopping cart, in grocery bags, and also in the refrigerator.
