Crumbled Apple Cake

Serves 12

Looking for a filling snack to satisfy your sweet cravings and taste buds? Here's a delicious dish that will leave you asking for more!

Ingredients:

  • 50 ml vegetable oil
  • 60 gm brown sugar
  • 1 tsp vanilla essence
  • 1 tsp vinegar
  • 60 gm curd
  • 190 gm maida
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon powder
  • 140 ml milk

For the topping:

  • 30 gm oats
  • 30 gm butter
  • 50 gm powdered sugar
  • 20 gm maida
  • 1 tsp vanilla essence
  • 1 apple

Method:

  1. Mix oil and brown sugar in a bowl.
  2. Add vanilla essence, vinegar, and curd to the bowl, and whisk it all together till bubbles start to appear.
  3. Add maida, baking soda, baking powder, and cinnamon powder to the bowl and mix well.
  4. Finally, add milk, mix, and fold well. Your cake batter is ready.

For the crumble topping: 

  1. Add oats, melted butter, sugar, maida, and vanilla essence in another bowl.
  2. Mix them all together till they form a crumbling mixture.
  3. Chop the apple finely and add it to the mixture.

Baking instructions:

  1. Preheat the oven to 180°C.
  2. Grease an eight-inch round pan.
  3. Pour the batter into the pan.
  4. Add the crumble topping on top of the batter.
  5. Bake in the oven for 40 to 45 minutes, till a toothpick inserted in the center comes out clean.
  6. Remove from oven and allow the cake to cool before serving.

Dry Fruits And Oats Lollipop

Makes 8

Lollipops need not always be loaded with sugar and artificial flavors. Here's one with a twist!

Ingredients:

  • 1 cup roasted oats
  • 3 tbsp chopped walnuts
  • 3 tbsp chopped dry fruits (figs, apricots, raisins, etc.)
  • 1 cup chopped dates
  • 150 gm dark chocolate (roughly chopped)
  • 150 gm white chocolate (roughly chopped)

Method:

  1. Mix the roasted oats, chopped walnuts, dry fruits, and dates in a bowl.
  2. Make small balls out of the mixture.
  3. Fix an ice cream stick to all the balls.
  4. Melt both the dark chocolate and the white chocolate together.
  5. Dip the dry-fruits balls in chocolate one by one. Decorate the lollipops the way you want it.
  6. Place the lollipops in glasses. Or, you can spread some play dough/chapati dough on a plate and stick the lollipops in it.
  7. Place the lollipops in the freezer.
  8. Take it out after about half an hour and enjoy the lip-smacking lollipops!

Egg-mayo Sandwich

Here's a tasty evening snack that's quick and easy to prepare and is packed with nutrients.

Ingredients:

  • 1 cup mayonnaise
  • 1/2 cup chopped cabbage
  • 1 cup grated carrot
  • 1/2 cup sweet corn
  • 1/2 cup chopped onions
  • 10 slices of bread
  • 3 boiled eggs (sliced)
  • Salt to taste

Method:

  1. Take the mayonnaise in a bowl and beat it with a pinch of salt (if needed). Keep it aside.
  2. Mix all the vegetables.
  3. Add the mayonnaise to the vegetables and mix well.
  4. Take one slice of bread and spread one tablespoon of the veg-mayo mix on it.
  5. Add about four slices of egg on top and cover it with another slice of bread.
  6. Use a knife to cut the sandwich diagonally across the center to form two triangular sandwiches.
  7. The appetizing snack is ready to be served!

Spicy Poha Dhokla With Punjabi Lassi

Serves 2

Here's a unique dish that blends the goodness of two popular Indian dishes poha and dhokla! And a lip-smacking, healthy drink to go with it.

Ingredients:

  • 1 cup poha
  • 2 tbsp curd
  • 2 tbsp besan
  • 1 cup chopped tomato
  • 1 cup chopped onion
  • 1 cup chopped cucumber
  • Green chilli finely chopped (adjust for desired spiciness)
  • Black pepper to taste
  • Salt to taste
  • 2 tbsp oil
  • 1 tsp garam masala
  • 1/2 tsp baking soda
  • Chilli flakes (as desired)
  • 1 tsp kasuri methi 

For the tadka:

  • 1 tsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp white sesame seeds
  • Curry leaves (two sprigs)

For the Punjabi lassi:

  • 400 ml curd
  • 3 tsp sugar (powdered)
  • 3 to 4 cardamoms
  • A pinch of saffron
  • 8 almonds (finely chopped)
  • 8 pistachios (finely chopped)

Method:

  1. Soak poha for 3 to 4 minutes and drain the water.
  2. Add all the other ingredients to the poha and mix them well.
  3. Take a cake tin and pour the mixture into it.
  4. Place the cake tin in a dhokla maker and steam it for 25 to 30 minutes on high flame.
  5. Once the dhokla is done, take a frying pan for the tadka and pour some oil in it.
  6. Add the white sesame seeds, mustard seeds, and curry leaves. Saute till the mustard seeds start to pop.
  7. Cut the dhokla into squares and add them to the seasoning. Mix and let it cook for a few minutes.
  8. Serve the poha-dhokla dish with tomato sauce and tamarind chutney.

For the Punjabi lassi: 

  1. Beat the curd using a whisk until it becomes smooth and creamy.
  2. Add sugar powder and cardamom to it and mix well. Then add saffron.
  3. Pour it into glasses and garnish it with almonds, pistachios, and saffron.
