One pot meals are perfect for those times when you are unsure of what to cook, or you are hard pressed for time. These meals are nothing but mixing all the ingredients in one pot, and everything prepared or cooked in that one vessel. The vessel could be anything – a bowl, jar, pan or kadai.

They offer the comfort of a home-cooked meal and almost always contain a nice fusion of vital nutrients all rolled up into one happy dish. Be it guests suddenly coming over for dinner or a Sunday brunch with family, one pot meals are a great choice to try. It saves time and energy, and also ensures minimal clean-up thereafter.

Take a look at six unique and exotic one pot meal recipes that cater to both vegetarians and non-vegetarians. Get set to impress guests or surprise your family.

1. Slow Cooker Chicken Tortellini Soup

Ingredients:

Soup:

  • 450g boneless skinless chicken thighs
  • 220g sliced baby Portobello mushrooms
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 cup heavy cream
  • 220g dried cheese tortellini pasta

Walnut Pesto:

  • 1 cup walnuts
  • 1½ cups spinach
  • ½ cup grated parmesan
  • 1/4 cup olive oil
  • 2 tbsp water
  • 1 tsp salt

How to prepare:

Soup:

  1. Add chicken, mushrooms, broth, thyme, onion powder and garlic powder to slow cooker.
  2. Cover and cook on low heat for about 6-8 hours or on high heat for 3-4 hours.
  3. Remove cooked chicken from slow cooker and shred. Put the shredded chicken to the slow cooker.
  4. Stir in cream and tortellini.
  5. Cover and continue to cook on high for 15-30 minutes until the pasta is tender.

Walnut Pesto:

  1. In a food processor or blender, add walnuts, spinach, Parmesan and olive oil.
  2. Blend it until smooth, adding water as needed until you achieve a smooth consistency.
  3. Add salt to taste.
  4. Serve chicken tortellini soup topped with walnut pesto!

2. Walnut Autumnal Chia Smoothie Pot

Ingredients:

For the chia mixture:

  • 4 tbsp chia seeds
  • 230ml milk
  • 1 tsp cinnamon
  • 1 tsp vanilla paste
  • 4 tbsp yoghurt

For the smoothie:

  • 1 banana, cut into chunks and frozen
  • 120g frozen blackberries (reserve a few for garnish)
  • 1/2 tsp cinnamon
  • 160ml milk
  • 1 apple, thinly sliced
  • 16 walnut halves, toasted

How to prepare:

  1. To make the chia mix, place the chia seeds, milk, cinnamon, vanilla paste and yoghurt into a bowl and whisk to combine.
  2. Spoon into two pots (you can use jars if you don’t have a suitable pot) and leave in the fridge for at least one hour (or up to 12 hours) to allow the chia to swell and absorb the liquid.
  3. When your chia mix is ready, place the banana, blackberries, cinnamon and remaining milk into a blender and whizz until smooth.
  4. Pour the smoothie mixture on top of the chia, then decorate each pot with the walnuts, thinly sliced apple and reserved blackberries.

3. One Pan Chicken With Oven Root Vegetables Recipe

Ingredients:

  • 2 egg yolk
  • 2 teaspoons medium hot mustard
  • 4 chicken breasts
  • 100g walnuts, chopped
  • 60g breadcrumbs
  • 2 tbsp parmesan
  • A small bunch of flat parsley, roughly chopped
  • 1 tbsp rosemary, finely chopped
  • Salt and pepper
  • 2 tbsp olive oil
  • 750g vegetables (approx) e.g. beetroot, carrots, parsnip, parsley root, celery
  • 3-4 potatoes medium size

How to prepare:

  1. Preheat the oven to 170°C.
  2. Whisk egg yolk and mustard together in one bowl and season it with salt and pepper. Now soak the chicken breasts into this mixture.
  3. Mix breadcrumbs, walnuts, parmesan and the chopped herbs in a big, flat bowl and coat each chicken breast with the mixture.
  4. Wash and quarter the potatoes and peel rest of the vegetables and cut them into same sized pieces.
  5. Layer a baking tray with olive oil and lay the chicken breasts on it. Cover the chicken breasts with vegetables and season with salt and pepper. Place the tray in the oven and bake for about 10 minutes.
  6. After 10 minutes take the tray out of the oven, turn the chicken and vegetables upside down and bake for another 10 to 15 minutes.

4. Salmon, Walnut And Avocado Grain Bowls

Ingredients:

  • Chipotle Lime Vinaigrette
  • 1/4 cup extra virgin olive oil
  • 3 tbsp lime juice
  • 1 tsp sugar
  • 3/4 tsp chipotle chili powder
  • ½ tsp garlic salt
  • 1/8 tsp black pepper

Salmon Bowl

  • 450g salmon fillets
  • 4 cups kale, chopped and lightly packed
  • 2½ cups cooked brown rice
  • 1 cup walnuts, toasted and coarsely chopped (plus more for garnish)
  • 1 1/3 cups cooked black beans
  • 3/4 cup red or green bell pepper, diced
  • 1 large avocado, peeled, pitted and cubed
  • 2 large green onions, sliced
  • 1/4 cup fresh cilantro leaves, roughly chopped

How to prepare:

  1. Whisk together all vinaigrette ingredients in a small bowl. Cover and refrigerate until ready to serve. (May be prepared several days ahead)
  2. Cook salmon on a well-oiled grill over medium-high heat for 3 to 4 minutes on each side. Remove from the grill and remove the skin. Let it cool, and then cut into 1/2-inch pieces.
  3. Mix kale and brown rice together in a large bowl and toss with vinaigrette. Place equal amounts on one side of 4 large salad bowls.
  4. Place equal amounts of walnuts, salmon, black beans, bell pepper, avocado and green onion on the other side of the bowl.
  5. Garnish with cilantro and additional walnuts.

5. Walnut And Apple Bircher Pots

Ingredients:

  • 1½ apple
  • 400ml milk
  • 4 tablespoons of ground walnut (a great way to use up left-overs from homemade walnut milk)
  • ½ tsp cinnamon
  • 70g porridge oats
  • 15g dried apricots, roughly chopped
  • 20g toasted walnuts, roughly chopped

How to prepare:

  1. Grate 1 apple, discarding the core. Place in a bowl with ground walnut, cinnamon, oats and milk and leave the mixture to soak overnight.
  2. Spoon the bircher into 2 bowls.
  3. Dice the remaining apple into thin vertical slices, then top the bircher with the apple thin vertical slices, apricots and walnuts to serve.

6. Walnut And Vegetarian Stew

Ingredients:

  • 2 tbsp oil
  • 1 piece of cinnamon
  • 3 green cardamom pods
  • 3 cloves
  • 2 bay leaves
  • Few curry leaves
  • 1 small chopped onion
  • 2 tsp chopped ginger
  • 2 small cloves of garlic, minced
  • ½ tsp freshly cracked black pepper
  • 1 large diced potato
  • 1 diced carrot
  • 3-4 green beans cut into pieces
  • ½ cup green peas
  • 1½ cups thin coconut milk
  • Salt to taste
  • ½ cup thick coconut milk
  • ½ cup walnut halves

How to prepare:

  1. Now add onions, ginger and garlic. Sauté well till the onions turn soft and translucent. Then add cracked black pepper and mix well.
  2. To this, add vegetables, thin coconut milk and salt. Cover and cook till the vegetables are soft for 10 minutes and then add walnuts.
  3. While the vegetables are cooking, check seasoning and add the thick coconut milk. Let it simmer for a couple more minutes or till heated through, but do not boil the stew after adding thick coconut milk.
  4. Garnish with walnuts and serve hot.
