Top 8 Mother's Day Treats To Make For Your Mother

Mother’s Day 2020, which falls on Sunday, 10 May, is the day children would want to express their love and appreciation for their mothers. Through the year, many mothers work hard to pamper the palate of their family members. What better way to appreciate their contribution than by asking them to put their feet up and enjoy something their children have prepared?

Tap into your culinary talents but remember that you have to be careful in the kitchen. Here are some Mother’s Day food recipes that you may want to try out.

For younger children:

1. Biscuit toppings: This is a very easy recipe for young children. Yet, the outcome is very tasty and quite addictive! An adult could do the slicing work, if the children are not old enough to handle a knife.

Ingredients

  • 1 pack of biscuits (salty)
  • 1 cup tomato slices
  • 1 cup cucumber slices
  • ½ cup pineapple pieces
  • ½ cup cheese (grated)
  • 1 tsp sugar
  • ½ tsp pepper (powdered)
  • 2 tbsp tomato ketchup

Method

  1. Place all the biscuits on a flat plate.
  2. Place the tomato, cucumber, pineapple and cheese in different combinations on the biscuits.
  3. Spread some tomato ketchup on top and sprinkle some sugar and pepper on it.

2. Peanut snack: The recipe for this popular snack is easy but would require adult supervision.

Ingredients

  • 1 cup peanuts
  • ½ tsp mustard seeds
  • A pinch of asafoetida
  • 1 onion (finely chopped)
  • Some curry leaves (finely chopped)
  • ¼ tsp turmeric powder
  • ½ tsp salt
  • ½ tsp ginger (grated)
  • 1 tsp lemon juice
  • 2 tsp vegetable oil

Method

  1. Roast the peanuts in a pan.
  2. Remove from the stove and allow to cool.
  3. When they are cool, rub off the skin.
  4. Heat the oil in a pan and add the mustard seeds.
  5. When they start to splutter, add the curry leaves, onion, ginger, turmeric powder, salt and asafoetida.
  6. When the onion turns light brown, add the peanuts and stir.
  7. Mix in the lemon juice just before serving

For teens:

3. Apple pancakes: If you want to dish up a sumptuous breakfast for your mother, apple pancakes are an easy option.

Ingredients

  • 1½ cups flour (maida)
  • 1 egg
  • 2 tsp sugar
  • ½ tsp salt
  • 1 apple (peeled and chopped)
  • 1 tsp vanilla essence
  • 2 tsp baking powder
  • Milk (as required)
  • Vegetable oil (as required, to fry the pancakes)
  • Honey or jam

Method

  1. Stew the pieces of apple in boiling water until they soften
  2. Beat the egg slightly in a bowl.
  3. Add the sugar, salt, vanilla essence and baking powder to it.
  4. Add the flour and then the milk, as required, to get the consistency of idli batter.
  5. Whisk the ingredients for a few minutes.
  6. Add the stewed apple pieces.
  7. Heat a shallow pan and sprinkle some oil onto it.
  8. Then spread the batter on it (should be thick and of medium size).
  9. Allow to cook in medium heat.
  10. When the pancake turns bubbly, flip it over to cook the other side.
  11. Serve hot with honey or jam.

4. Hummus: This is a healthy dish that can be used as a dip for carrots and cucumbers chopped into finger- sized pieces.

Ingredients

  • 1 cup cooked chickpeas (kabuli chana)
  • ½ cup white sesame seeds
  • 10 cloves of garlic cloves (peeled)
  • Water (as required)
  • ¾ tsp salt
  • ½ tsp red chilli powder
  • 1 cup curd
  • 3 tsp olive oil

Method

  1. Roast the sesame seeds lightly in a pan for a couple of minutes.
  2. Remove from the pan and allow to cool.
  3. In a mixer, grind the cooled sesame seeds and garlic cloves with 1 cup water.
  4. Add the cooked chana, salt, red chilli powder, curd and a little water (if required), and blend again to a thick consistency (like that of chutney).
  5. Pour the mixture in a bowl, drizzle the olive oil on it and mix lightly. Your hummus is ready.

5. Khaman: This Gujarati speciality is a wholesome and tasty snack that can be relished with coriander leaves chutney.

Ingredients

  • 2 cups besan (gram flour)
  • 2 tsp fruit salt (such as Eno)
  • 1 cup curd
  • Water (as required)
  • 1 tsp lemon juice
  • 1 tsp grated ginger
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • ½ tsp salt

For tempering

  • 1 tsp mustard seeds
  • 8 to 10 curry leaves (finely chopped)
  • 2 green chillies (chopped)
  • 2 tbsp grated coconut
  • A pinch of asafoetida
  • 3 tsp vegetable oil

Method

  1. In a bowl, mix the besan, lemon juice, grated ginger, turmeric powder, red chilli powder and salt. Add the curd and water as required to get the consistency of idli batter.
  2. Whip with a blender and then keep aside for 10 minutes.
  3. Add the fruit salt and beat the bubbling batter with a spoon.
  4. Steam the batter for 20 minutes in a cooker without the weight.
  5. After the khaman becomes cool, cut it into medium-sized squares.
  6. Heat some oil in a pan and add the mustard seeds.
  7. When they splutter, add the curry leaves, green chillies and asafoetida.
  8. Fry for a minute and add it to the khaman pieces. Sprinkle some grated coconut too on the khaman.

6. Noodles with peanut sauce: One of the simplest recipes, this is a favourite among children. But I am sure moms will enjoy it too!

Ingredients

  • 200 g cooked noodles (not too soft)
  • 1 cup roasted peanuts
  • 4 tbsp soya sauce
  • 4 tbsp vinegar
  • 4 tsp sugar
  • ½ tsp salt
  • 4 red chillies
  • 10 cloves of garlic

Method

  1. In a mixer, put the roasted peanuts, soya sauce, red chillies, vinegar, garlic, salt and sugar, and grind to a thick paste.
  2. Once the noodles become cool, stir in the sauce.

7. Mexican rice: Easy to make and sumptuous, try making this mixed rice for your mom.

Ingredients

  • 2 cups basmati rice (cooked and cooled)
  • 4 onions (chopped finely)
  • 2 capsicums (deseeded and chopped into long, thin strips)
  • 2 tomatoes (chopped into long, thin strips)
  • 4 tsp vegetable oil
  • ½ tsp salt
  • ¾ tsp red chilli powder
  • 10 cloves of garlic (chopped finely)

Method

  1. Heat the oil in a pan, add the chopped garlic and fry well.
  2. Add the chopped onions and fry until they turn brown.
  3. Add the capsicums and fry till tender and crisp.
  4. Add the tomatoes, salt and red chilli powder, and fry for a few minutes.
  5. Mix the rice in gently with the vegetables.

8. Pasta salad

Ingredients

  • 2 cucumbers (chopped)
  • 2 tomatoes (chopped)
  • 1 carrot (chopped)
  • ½ each of green, yellow and red capsicums (chopped)
  • 1 cup pasta (cooked)
  • ⅓ cup peas (cooked)
  • ⅓ cup corn (cooked)

For the dressing

  • ½ tsp salt
  • ½ tsp ground pepper
  • 1 tsp honey
  • 1 tsp lemon juice
  • 4 tbsp chopped coriander leaves
  • 6 cloves of garlic (finely minced)
  • 2 tsp olive oil
  • ½ tsp oregano

Method

  1. Mix the chopped vegetables, pasta, peas and corn in a bowl.
  2. In another bowl, add the olive oil, salt, pepper, honey, lemon juice, coriander leaves, minced garlic and oregano, and mix well.
  3. Add this dressing to the salad and toss gently.
