Going grocery shopping at the neighbourhood supermarket exposes us to an array of exotic ingredients, these days. The food section, with so many interesting gourmet products, tempts us to try new recipes for the family. But, these exotic ingredients can make your monthly food budget go haywire if you are not careful. You can rustle up amazing and cheap meals with simple ingredients using a little imagination. Here are some unique dinner ideas that look appetising and are light on the pocket. What’s more, they are all under ₹100.

Vermicelli with Mock Meatballs

Ingredients:

  • 1 tbsp oil
  • 2 medium onions
  • 1 carrot, roughly chopped
  • 8-10 cloves garlic 
  • 4-5 tomatoes, pureed
  • 1 ½ cup cooked green moong
  • ¼ cup roasted peanuts
  • Salt to taste
  • Crushed black pepper to taste
  • 1 tsp chilli flakes
  • ¼ cup shredded cheese of your choice (optional)
  • 2 cups durum wheat vermicelli

Method:

  1. In a mixer jar, combine the cooked moong, one roughly chopped onion, 3-4 garlic cloves, carrot, roasted peanuts, salt and pepper.
  2. Make small balls with this mixture and cook them with few drops of oil in a paniyaram pan. Cook evenly by turning in between, you can also bake them in a preheated oven at 200 degrees C for 25-30 minutes till they look golden brown. Prepare and keep them aside.
  3. Meanwhile, heat the remaining oil in a pan and add one finely chopped onion. Cook till it turns pink. Add the remaining garlic, cook for a minute and then add tomato puree. Cook till excess water from tomatoes is absorbed and then add salt, pepper and chilli flakes and mix well. Add the vermicelli and mix thoroughly. Add three cups of water and cook.
  4. Once the water is absorbed, and vermicelli cooked, serve with the lentil balls on a plate. Add shredded cheese for an exotic touch.

Chickpea Burgers

Ingredients:

  • 2 cup boiled chickpeas
  • ¼ cup chopped coriander leaves
  • Juice and zest of 1 lemon
  • Salt to taste
  • Crushed black pepper to taste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ cup roasted and powdered oats
  • ½ cup poha (beaten rice)
  • 2 tbsp whole wheat flour mixed with 2 tbsp water
  • Oil for shallow frying the patties
  • Burger Buns
  • Tomato ketchup as required
  • Tomato slices as required

Method:

  1. In a blender, combine the cooked chickpeas, coriander leaves, juice and zest of lemon, salt, pepper, cumin powder and coriander powder.
  2. Take out this mixture in a large bowl and add oats flour to it and form the burger patties, add more flour if required.
  3. Coat these patties in the wheat flour-water slurry, and then coat them with poha on all sides.
  4. Heat little oil in a pan. Shallow fry the patties until golden brown.
  5. Slice and prepare the burger buns. Apply ketchup on them, arrange tomatoes and then place a patty each. Relish the healthy burger.

Corn and Mint Pulao with Cucumber Raita

Ingredients:

  • 2 cups rice, washed and soaked
  • ½ cup fresh mint leaves
  • ½ cup fresh coriander leaves
  • ½ inch ginger piece
  • 4-5 garlic cloves
  • 1 green chilli
  • 1 large onion sliced
  • ¾ cup corn kernels
  • 1 tbsp oil
  • 1 tsp garam masala
  • Salt to taste
  • Crushed pepper to taste
  • 2 cups of fresh curd
  • ½ cucumber grated

Method:

  1. Grind the mint leaves, coriander leaves, ginger, garlic and green chilli to make a smooth paste.
  2. In a large pan, heat oil and add sliced onions. Sauté till they are translucent. Add corn kernels and cook for another 4-5 minutes.
  3. Add the prepared paste and cook for 2-3 minutes. Add the drained rice and mix well.
  4. Add 4 cups of water, salt, pepper and garam masala and stir well.
  5. Cover and let it cook on medium heat till all the water is absorbed.
  6. For the raita, beat the curd until smooth, add the grated cucumber, salt and pepper and mix well. Chill and serve the raita with the hot pulao.

Barley Salad

Ingredients:

  • 1 cup barley pearls
  • 2 tomatoes, chopped
  • 1 cucumber, diced
  • 1 onion, chopped
  • ½ cup boiled corn kernels
  • Salt to taste
  • Crushed black pepper to taste
  • 1 tsp vinegar
  • Juice of 1 lemon
  • 1 tbsp olive oil
  • 2 tbsp water
  • ¼ cup roasted and crushed peanuts

Method:

  1. Cook the barley pearls in double the quantity of water till the water is absorbed and the pearls are tender.
  2. In a bowl, combine olive oil, vinegar, lemon juice, water, salt and pepper. Mix well and keep aside.
  3. In another large bowl, combine rest of the ingredients except peanuts, with the dressing and mix well.
  4. Finally, top with roasted peanuts. It’s perfect for a light family dinner.

Palak Koftas in Tomato Gravy

Ingredients:

  • 1 cup spinach leaves, chopped and blanched
  • 2-3 tbsp besan (gram flour)
  • 2 onions, finely chopped
  • 7-8 cloves garlic, chopped
  • 1 small green chilli, chopped
  • Salt to taste
  • 2 tbsp oil
  • 3-4 pureed tomatoes
  • 1 bay leaf
  • 1 tsp cumin seeds
  • 1 tsp kasuri methi (dried fenugreek leaves)
  • 1 tsp chilli powder
  • 1 tbsp coriander powder
  • ¼ tsp turmeric powder
  • ½ tsp garam masala powder
  • 1 tbsp thick curd

Method:

  1. In a bowl, combine spinach, chopped green chilli, 2 tbsp chopped onion, ½ tsp chopped garlic and the besan. Add salt and combine well. Form small kofta balls with this mixture and fry them in a paniyaram pan with little oil. Cook till crisp and keep aside.
  2. In another pan, heat oil and add the bay leaf and cumin seeds. When they crackle, add remaining garlic and sauté for 15-20 seconds.
  3. Add the remaining chopped onions and sauté till golden brown. Add the pureed tomatoes and stir well.
  4. Add salt, chilli powder, turmeric powder, coriander powder, garam masala and kasuri methi.
  5. Add 1 tbsp thick curd and stir continuously, then add 1 cup of water and let the gravy cook for 4-5 minutes.
  6. Add the koftas just before serving and enjoy.
