    1. Egg Muffins

    Serves: 6

    • 1/2tbsp olive oil
    • 1/2 cup chopped red pepper
    • 1/2 cup chopped capsicum
    • 1/2 cup chopped onion
    • 1 cup spinach (finely chopped)
    • 1 cup chopped mushrooms
    • 1 clove garlic (minced)
    • 2 whole eggs
    • 2 egg whites
    • Salt to taste
    • Hot sauce (optional)
    1. Preheat the oven to 350 degrees F (170 degrees C)
    2. Grease a standard non-stick 6-slot muffin pan and set it aside.
    3. Place a large non-stick pan over medium heat and add oil.
    4. Once the oil is hot, add red pepper, green pepper, and onion.
    5. Saute for 5-7 minutes or until peppers are tender.
    6. Add the spinach and mushrooms and cook for an additional 2 minutes.
    7. In the last 30 seconds, add in minced garlic. Season with salt and remove from heat.
    8. In a large bowl, crack all the eggs and egg whites and whisk together.
    9. Stir in cooked veggies. Pour the mixture evenly into the prepared muffin tin.
    10. Bake for 15-20 minutes or until the tops are firm to the touch and eggs are cooked. Cool slightly and serve.

    2. Stuffed boiled eggs

    This dish is an interesting departure from the regular boiled eggs. It can be prepared in a few minutes and will keep one full for hours.

    • 6 eggs
    • 1/3 cup diced avocado
    • 1tbsp grated red onion
    • 1tbsp mayonnaise
    • 1/2tbsp lemon juice
    • 1/3tsp garlic powder
    • 1/4tsp chili flakes
    • Pinch of black pepper
    • Salt to taste
    1. Boil the eggs for about eight minutes. Cool slightly and remove the shell.
    2. Slice the eggs in half lengthwise and remove the yolks. Mash the yolks.
    3. Stir avocado, onion, mayonnaise, lemon juice, garlic powder, crushed red pepper, black pepper, and salt into yolks. Divide and stuff into the whites.

    • 100g soaked and steamed chickpeas, drained
    • 3 spring onions, trimmed and sliced
    • 1 small clove garlic, crushed
    • 2 large eggs, beaten
    • 1tsp olive oil
    • A pinch of salt and freshly ground black pepper
    • 1tsp harissa paste
    • 1 leftover whole wheat chapatti
    • 2 tbsp flat parsley, chopped

    1. Heat a small non-stick frying pan, add the oil, spring onion, garlic, and chickpeas, cook for one minute, stirring continuously.
    2. Beat the eggs with seasoning and then add to the pan. Continue to cook for a further 30 seconds, stirring until the eggs are scrambled to your liking. Stir in the harissa paste.
    3. Spoon the mixture down the center of the chapatti. Scatter parsley over the mixture.
    4. Fold in the two ends, then roll up the wrap to enclose the filling.
    5. Serve sliced in half.

    5. No flour egg and nutella souffle

    This easy-to-make souffle uses just two ingredients but makes for one tasty recipe.

    • 2 eggs
    • 1/2 cup nutella
    1. Pre-heat oven to 375 F.
    2. Take some nutella in a small bowl.
    3. Separate the eggs, mix the yolks with the nutella, and put the egg whites in a separate bowl.
    4. Whisk the whites until they hold stiff peaks, but not too much. You can add a teaspoon of sugar to help stabilize the whites and prevent over-beating.
    5. Mix 1/3 of the whipped egg whites into the nutella bowl.
    6. Add the remaining egg whites into the nutella and gently fold with a spatula until incorporated.
    7. Pour the mixture into a buttered, oven-safe mug.
    8. Cook for 15 minutes. Serve hot.
